This is the ultimate North Indian solo feast. Kadai Paneer is a vegetarian
powerhouse, a vibrant stir-fry that proves complex flavor can be achieved quickly.
Its defining feature is the Kadai Masala, a proprietary spice blend that you will
roast and grind fresh.
The quick-roast of the spices is your mise en place investment; it takes a minute
but elevates the dish into a league of its own. Your Wok or Large Skillet (the
Kadai’s descendant) is perfect for building the rich, semi-dry, tomato-onion base
(bhunao), keeping the bell peppers crisp, and sealing the tender paneer.
1. Your Mise en Place
The Protein: Paneer (Indian Cheese) 2 ounces Cubed.
The Veggies: Medium Onion 1/4 unit Finely chopped.
Bell Pepper (Capsicum) 1/4 cup Sliced.
The Base: Medium Tomato 1 unit Pureed
(or very finely chopped).
The
Aromatics: Ginger-Garlic Paste 1/2 tsp Use store-bought
or make fresh.
The Sear: Oil 1tbsp
The Spice Star
(Kadai Masala): Coriander Seeds 1 tsp Dry-roast and grind.
Dry Red Chili 1 unit Dry-roast and grind.
Cumin Seeds 1/4 tsp Dry-roast and grind.
Peppercorns 1/4 tsp Dry-roast and grind.
The Seasoning: Turmeric Powder 1/4 tsp For color and earthiness.
The Finish: Salt To taste
Cilantro To garnish

2. The Prep Dance (The Spicy Foundation)
2.1 The Spice Grind: Dry roast the coriander seeds, dry red chili, cumin, and
peppercorns in a dry pan over medium heat for about 1 minute until they are
intensely fragrant. Immediately remove them and grind them to a coarse powder
(your Kadai Masala).
2.2 Mise en Place: Cube the paneer, slice the pepper, chop the onion, and puree
the tomato. Get your ginger-garlic paste ready.
3. The Stir-Fry Climax (The Bhunao Build-Up)
3.1 Build the Base: Heat the oil in your Wok. Sauté the chopped onions until they
are translucent. Add the ginger-garlic paste and sauté for a few seconds until the
raw smell vanishes.
3.2 The Bhunao: Add the pureed tomato. Cook this base, stirring occasionally,
until it reduces to a thick paste and the oil begins to separate from the mixture
(bhunao technique). This creates the depth of flavor.
3.3 Pepper Crunch: Add the sliced bell pepper and cook for 3–4 minutes until
they are al dente (still slightly crunchy). Add your prepared Kadai Masala and
turmeric, mixing well to coat the vegetables.
3.4 Paneer Finish: Gently add the cubed paneer and salt. Stir gently to coat the
cheese with the spices and cook for 2 to 3 minutes. Be careful not to cook the
paneer for too long, or it will become tough and rubbery!
Garnish with fresh cilantro and serve hot with rice or bread.
